Spicy Mexican Fruit Popsicles with La Fregona® Mexican Street Corn Chilito

If you love fresh watermelon with a little kick, these homemade popsicles are for you. Juicy watermelon is blended with fresh lime and La Fregona Mexican Street Corn Chilito, then frozen until perfectly refreshing. Finish them with a little more Mexican Street Corn Chilito before serving for an extra burst of flavor.

INGREDIENTS

  • 4 cups seedless watermelon, cut into chunks

  • 2 tablespoons fresh lime juice

  • 2 tablespoons sugar, or more to taste

  • 2 tablespoons La Fregona Mexican Street Corn Chilito

  • 1/4 cup water

  • Additional La Fregona Mexican Street Corn Chilito, for serving

INSTRUCTIONS

1. Prepare the watermelon.
Cut the watermelon into small pieces and remove any seeds if necessary.

2. Blend the fruit.
Add the watermelon, lime juice, sugar, water, and 2 tablespoons of La Fregona Mexican Street Corn Chilito to a blender. Blend until completely smooth.

3. Taste the mixture.
Taste before freezing and adjust the sweetness or lime if needed. The flavor should be fresh and fruity, with the Mexican Street Corn Chilito adding a savory, spicy kick.

4. Fill the molds.
Pour the watermelon mixture into popsicle molds, leaving a little space at the top for expansion as they freeze. Insert the popsicle sticks.

5. Freeze.
Freeze for at least 6 hours, or preferably overnight, until the popsicles are completely firm.

6. Serve.
Run the outside of the molds briefly under warm water to release the popsicles. Finish with a drizzle of La Fregona Mexican Street Corn Chilito and serve immediately.

  • Use a sweet, ripe watermelon for the best flavor.
