If you've got fresh fruit at home, you need to make this Morelian Gaspacho. It's a refreshing mix of mango, jicama, and pineapple tossed with fresh orange juice, lime, cotija cheese, and our Original Mexican Streetcorn Chilito Sauce. Add it inside the glass, throughout the fruit, and generously over the top, because there’s never enough salsa.
Servings: 1 (16 oz glass)
Prep time: 10 minutes
INGREDIENTS
-
1/2 cup fresh mango, diced
-
1/2 cup jicama, diced
-
1/2 cup fresh pineapple, diced
-
1/4 cup fresh orange juice
-
1 1/2 tbsp fresh lime juice
-
2 tbsp white onion, finely diced
-
2 tbsp cotija cheese, crumbled
-
1/2 tsp salt, to taste
-
3 tbsp La Fregona Original Mexican Streetcorn Chilito Sauce, divided
-
1 tbsp chile-lime powder, for the rim
-
2 tbsp fresh mango, diced, for topping
-
1 tbsp cotija cheese, for topping
-
Lime wedges, for serving
INSTRUCTIONS
-
Mix the fruit: Add the mango, jicama, pineapple, and diced onion to a bowl. Gently toss to combine.
-
Add the citrus: Pour in the orange juice and lime juice. Add the salt and gently mix until all the fruit is coated.
-
Add the Chilito: Add 1 tbsp of Chilito Sauce and gently toss the fruit again so the sauce is distributed throughout.
-
Rim the glass: Run a little Chilito Sauce around the rim of the glass, then dip it into the chile-lime powder so it sticks.
-
Sauce the inside: Drizzle about 1 tbsp of Chilito Sauce down the inside walls of the glass, turning it as you go to create streaks throughout the glass.
-
Fill the glass: Slowly spoon the fruit mixture into the glass, allowing the citrus juice and Chilito Sauce to settle between the layers.
-
Top it off: Add the remaining mango and cotija cheese, then finish with a generous drizzle of Chilito Sauce over the top. Serve immediately with a lime wedge.
TIPS
-
Want it spicier? Add another tablespoon of Chilito Sauce directly to the fruit.
-
Want it milder? Keep most of the Chilito on the outside and use less in the fruit mixture.
-
Want it extra fresh? Add a little more lime juice right before serving.
-
Very ripe, sweet fruit may need less orange juice.
-
For the classic Morelian-style experience, serve it ice cold and loaded with lime, cotija, and Chilito Sauce.
