Michoacán-Style Chicharrón with La Fregona® Mexican Street Corn Chilito

If you've got a crispy chicharrón at home, you need to make this Michoacán-Style Prepared Chicharrón. It's a crunchy Mexican street-food classic loaded with fresh cabbage, tomato, onion, pickled pork rinds, avocado, crema, cotija cheese, and our Original Mexican Streetcorn Chilito Sauce. Drizzle it all over the top for the perfect sweet, spicy, tangy finish, because there’s never enough salsa.

INGREDIENTS

  • 1 large crispy prepared chicharrón

  • 1 cup green cabbage, finely shredded

  • 1/4 cup tomato, diced

  • 1/4 cup white onion, thinly sliced

  • 1/4 cup pickled pork rinds (cueritos), sliced

  • 1/2 avocado, sliced

  • 2 tbsp Mexican crema

  • 2 tbsp cotija cheese, crumbled

  • 1 tbsp fresh lime juice

  • Salt, to taste

  • 3 tbsp La Fregona Original Mexican Streetcorn Chilito Sauce, divided

  • 1 tbsp Mexican hot sauce, optional

  • Lime wedges, for serving

INSTRUCTIONS

  1. Prepare the chicharrón: Place the large crispy chicharrón on a plate or serving tray.

  2. Build the base: Spread the shredded cabbage evenly over the chicharrón, followed by the diced tomato and sliced onion.

  3. Add the cueritos: Add the sliced pickled pork rinds throughout the toppings so every bite has a little crunch and tang.

  4. Add the avocado: Arrange the avocado slices over the top of the chicharrón.

  5. Add the crema: Drizzle the Mexican crema across the entire chicharrón.

  6. Add the cheese: Sprinkle the crumbled cotija cheese over the toppings.

  7. Add the Chilito: Generously drizzle about 2 tbsp of La Fregona Original Mexican Streetcorn Chilito Sauce across the entire chicharrón, letting it run between the toppings.

  8. Finish it off: Add the remaining Chilito Sauce over the top, squeeze fresh lime juice over everything, and add Mexican hot sauce if desired. Serve immediately with a lime wedge.

TIPS

  • Want it spicier? Add your favorite Mexican hot sauce before finishing with the Chilito Sauce.

  • Want more tang? Add extra lime juice and a few more pickled pork rinds.

  • Want it extra loaded? Add more avocado, cotija, and cueritos before the final Chilito drizzle.
